I samarbejde med FOCUS - (Food Culture Studies) ved Aarhus Universitet, indbyder vi til en eftermiddag om international forskning i gastronomi og bæredygtighed.
Dauro Zocchi fra Det Gastronomiske Universitet i Pollenzo, Italien, og Andrea Santamarina fra IE University og Studioa Santamarina, Madrid, Spanien vil fortælle om deres arbejde, der på meget forskellig vis udforsker hvordan gastronomi og bæredygtighed hænger sammen. Dauro Zocchi er kultur-og samfundsforsker, mens Andrea Santamarina er uddannet indenfor audiovisuel kommunikation, ligesom hun selv er udøvende kunstner/designer.
Begge er dybt optaget af madens rolle i det moderne samfund.
De to vil holde et oplæg hver på ca 20 minutter, hvorefter der er mulighed for spørgsmål og debat. Der vil serveres snacks undervejs.

Dauro Mattia Zocchi holds a PhD in Eco-Gastronomy, Education, and Society from the University of Gastronomic Sciences of Pollenzo, and he is currently pursuing his post-doc at the same university. His primary research interests include food geography, food scouting, and the promotion of food heritage in emerging countries. He has conducted several research projects in Africa (Kenya and Tanzania) and Latin America (Peru and Bolivia) with the aim of exploring the interplay between food heritage and sociocultural sustainability.
Andrea Santamarina, is a designer and food art historian. Her work, represented by Rossana Orlandi gallery in Milan and Mint gallery in London, explores the limits of drawing into different formats rescuing craft mediterranean traditions. She is a Ph.D. Doctor of Audiovisual Communication and her thesis reflects on how the visual arts influence contemporary cuisine. She is the head of the food cultural lab a IE University, a product design professor of Complutense University of Madrid, and has presented papers and communications in different universities and centers such as Royal College of Arts (London), Basque Culinary Center (San Sebastián), UNAM (México), NYU or Pontificia Università della Santa Croce (Rome)
